What is Paneer?
Paneer is a soft mild cheese commonly used in Indian cuisine. Made by setting milk using food-grade acids like lemon or citric acid, it is a protein-rich product but has a short storage life where processing quality and hygiene are important.

Detailed Process for Making Paneer

Milk Reception & Testing
Raw milk is delivered and evaluated for quality and percentage of fat.

Milk Standardization
Fat and SNF content are standardized as per preferred paneer quality.

Milk Heating
Milk is heated to ~85°C using a Pasteurizer or a Paneer Kettle from TechQu.

Coagulation
Food-grade acid is added to curdle the milk.
Paneer is separated from the whey.

Whey Drainage
Curd is collected in Paneer Draining Trolleys or Press Units to drain off excess whey.

Paneer Pressing
Paneer is shaped into blocks using a Paneer Pressing Machine.

Cutting & Cooling
Once it is in place it is trimmed to even sizes and refrigerated in cold water to set.

Packaging
